Meat is not just a source of protein – it provides a unique taste and sensory experience, characterized by a specific texture, juiciness, bite and a distinctive flavor. This can be a real challenge for formulators, because it is not easy to perfectly recreate the afore mentioned characteristics of meat. HIFOOD has developed Proteios is a range of textured vegetable proteins (TVPs), developed using advanced extrusion technology to deliver high-protein content (with at least 70% protein content), meat-like texture and a neutral taste profile. Proteios is designed to formulate plant-based meat and fish analogues with meat-like texture and a good bite, satisfy the most diverse production needs in terms of size, structure and shape, while providing high-quality protein content and also supporting cleaner label formulations from bolognese sauces to burgers, stews, baked goods and snack bars.
