Plant-based barista beverages must deliver both nutritional fortification and a consistent consumer experience, making formulation optimisation a key challenge for product developers. Understanding the factors that influence product performance and stability is essential for developing successful formulations.

This presentation examines the factors influencing foam quality and stability in commercially available plant-based beverages. Experimental evaluation of market products indicates that performance is primarily driven by protein content and protein–fat balance, while mineral fortification appears to play a less significant role than commonly assumed.

The data further demonstrates that calcium carbonate can support nutritional enhancement without negatively impacting product performance, making it a suitable option for fortified formulations.

In addition, ongoing research is investigating the relative contribution of key formulation parameters to better understand their influence on foam quality and stability.

Attendees will gain practical insights into formulation strategies that support both nutritional fortification and product performance in next-generation plant-based drinks.
