VTBake S-1009 is a glucoamylase. Glucoamylase hydrolyzes the α-1,4- and α-1,6-glycan bonds of polysaccharides (starch, glycogen, etc.) to glucose. During the bakery process, it increases fermentable sugar for yeast and improves tolerance of the dough.
