Calcium propionate is a white lightweight flake crystal or white powder, odorless or slightly propionic acid odor, stable in hot and light environments. Exposed to air, it is easily deliquescent, soluble in water, slightly soluble in ethanol and ether, and almost insoluble in benzene and acetone. Calcium propionate produces free propionic acid in the product, which has a strong inhibitory effect on Aspergillus niger, aerobic spore forming bacteria, and certain specific bacteria, and can extend the shelf life of the product.
