Exploring gluten free formulation strategies where ingredients functionality meets process control. Using ASEAN sourced flour and starches, proteins and hydrocolloids we address key challenges such as moisture migration, film-forming, structure retention, poor crispiness and weak adhesion. Developed through collaboration between our innovation and Quality Teams in a fully gluten controlled factory in Vietnam, these solutions deliver consistent functionality in food coating for seafood and poultry, as well as improve volume, crumb texture and softness in bakery systems, proving that ASEAN regional ingredients can meet complex functional demand for industrial scale.
