Glyloid® is a water soluble polysaccharide, derived from tamarind seed, which can be used as thickener and stabilizer in various food applications. It provides stable viscosity with smooth texture and rich mouthfeel in sauce, low-fat mayonnaise and emulsified dressing. For ice-cream, it can improve shape retention and stabilize ice-crystals especially when combined with Locust Bean Gum.
