Transglutaminase enzyme preparation from Streptomyces mobaraensis that is used to cross-link and bind a variety of proteins including those from meat, fish and dairy.Transglutaminase(TG) is a new food enzyme which could cause a cross-linking reaction between the inside of the protein and the molecule, making protein molecules change from small to large. After modifying by TG, the gelling, plasticity, water-holding, water-solubility and stability of protein will be improved.
